Dinner in Ouarzazate: how to plan a good evening

It is half past five. You are somewhere on the road between Aït Ben Haddou and town, the light has gone orange, and nobody in the car has thought about dinner. In most cities that would be fine. Around Ouarzazate it is the moment to decide, because the evening here runs on a shorter clock than visitors expect.

The evening rhythm

Restaurants that serve travellers start dinner around 6 or 7 pm. Most kitchens slow down around 10 pm, and outside the centre very little is open after that. Moroccan families eat later at home, but you will not be eating at home.

Two practical consequences. First, an early dinner is not a compromise here: it lets you eat as the air cools, then go up to a roof for the stars. Second, if you arrive late, warn someone. A message sent from the road changes everything.

Why the good kitchens want you to book

The dishes worth travelling for are slow. A tagine cooks for well over an hour in clay over gentle heat. Couscous is steamed in several passes. A pastilla is folded by hand. A kitchen that cooks this way cannot improvise twenty covers at 8 pm; it shops and prepares for the guests it knows are coming.

So booking is less about getting a seat than about getting the food. In high season (April to October) and at weekends, the tables that cook to order often fill a day or two ahead.

Order ahead, not just book

The best habit to adopt in Ouarzazate: choose your dishes when you book. Many places outside the centre work this way, with the order sent in the morning or early afternoon by WhatsApp. Your tagine goes onto the heat before you arrive, and you sit down to food rather than to a long wait.

If you are not sure what to choose, our food guide for first-time visitors explains how a Moroccan meal is built, and the tagine guide helps with the main course.

Town or village?

The choice depends mostly on where you sleep and how much driving you want to do after dark.

  • In the centre, around Avenue Mohammed V and Kasbah Taourirt, restaurants are walkable from the town hotels, menus are long and booking is less often needed. Ask for the dish of the day.
  • In the villages around town, Tifoultoute, Fint or the road towards Skoura, dinner is usually served in guesthouses that open their dining room to visitors. Menus are short, the cooking is closer to what families make, and you must book.

Our earlier article on where to eat in Ouarzazate walks through these areas in more detail, and our selection of restaurants names the kinds of tables we recommend.

Getting there and back

Petit taxis work within town; for the villages, agree on a fare and a return time with the driver, or ask your hotel to call one. If you drive, the roads around Ouarzazate are good but poorly lit once you leave the centre, so allow time and do not hurry.

Inside, on the patio or on the roof?

Evenings change a lot with the season. In spring and autumn the patio and the terraces are at their best. From December to February the nights can be cold, and a dining room with thick walls is more pleasant than a terrace, whatever the photos suggest. In summer, the late evening is the only comfortable time to sit outside. We wrote more about this in rooftop restaurants in Ouarzazate.

If you are coming back from an excursion

Plan the excursion around dinner, not the other way round. Leave Aït Ben Haddou, the studios or the Fint oasis with enough time to reach your table without rushing, and send your arrival time when you set off. For the ksar specifically, see dinner after Aït Ben Haddou.

At our table

We write this journal, so here is our own case, stated plainly. La Table du Berbère is at Riad Chay in Tifoultoute, about ten minutes from the centre by car or taxi, with parking on site. Dinner is served every evening from 6 to 10 pm, by reservation only. Each guest composes a menu from chef Jasmin's carte, a starter, a main and a dessert, with mint tea and water included, and it takes about an hour and a half to prepare once ordered. You can choose your dishes on the booking page or send them by WhatsApp to +212 6 61 70 38 86.

Quick answers

Can I find dinner after 10 pm? Do not count on it. Choice shrinks quickly after 10 pm, even in the centre, and in the villages you should plan to sit down well before.

Do I need to book for two people on a weekday? For a table that cooks to order, yes. A day ahead is usually enough outside the busy months.

Is dinner a light or a heavy meal? For travellers, it is the main meal of the day: salads or soup, one large dish, fruit or pastries, tea. One main dish per person is plenty.
